ROADKILL WINE PAIRING: RACCOON

I’d say most amateur roadkill chefs tend to make the same mistake. They prepare a masterfully roasted raccoon and wind up killing the flavor by serving it with an ordinary beer.

A dish like this should always be enjoyed with a robust red wine. The herbaceous overtones of a fine Merlot would truly bring out the subtle, yet succulent flavor of this down-home delicacy. Here are my 3 picks that won't cost you an arm and a leg or a bushy, little tail.
